Ingredients
1largesweet potato
Instructions
Preheat oven to 400 degrees and line a baking sheet with parchment paper.
Slice the sweet potato into 1/2 inch slices and place on the prepared baking sheet.
Bake until just soft, not mushy, about 20 minutes. Remove from the oven, allow it to cool for 5 minutes, and then add desired toppings.
Notes
You can toast the sweet potatoes in a toaster instead of baking. It may take several rounds until the sweet potatoes are soft. I find the oven to be easier and quicker, especially if making for more people.
